A TASTE OF THE COVE: Jenny’s Gin Fizz

 

Our supplies of Jenny’s Gin may be dwindling as lockdown gets extended, but if like us you’re longing for a taste of Soar Mill Cove, our Restaurant Manager Jason, shares one of his favourite Soar Mill Cove cocktails for you to try at home. Follow his simple recipe and recreate this classic Soar Mill Cove tipple for yourself.

 

THE INGREDIENTS

  • 50ml Jenny’s Gin
  • 25ml freshly squeezed lemon juice
  • 2 tsp sugar syrup
  • Sparkling water
  • Ice
  • Lemon garnish

 

THE METHOD

Pour Jenny’s gin, lemon juice and syrup into a shaker containing ice. Shake well until the outside of the shaker feels cold. Pour into a tall glass over ice and top with sparkling water and garnish with lemon.

 

JASONS TIPS

If you don’t have sugar syrup simply make by putting 200g caster sugar into a saucepan with 100ml of water. Heat gently until the sugar is dissolved and it starts to simmer. Then turn off the heat and allow to cool before using.
